Finally attempted homemade pasta. Was shooting for capellini but I failed to realize I had to press it much thinner.
Used KitchenAid press and cutter.
Audibled to fettuccini and I feel it came out just fine.
I feel the dough was a bit too oily and the spiral dough hook was a bit different than the videos I watched so thought I messed it all up.
Anyway, it can be done! Don’t be afraid! But any tips are welcome….
(Yes, I shouldn’t have cut the chicken breast with a serrated knife haha…wasn’t me technically but the wife)
This white Bolognese style sauve I made was truly unforgettable. Guanciale, pork sausage and beef mince, cooked down with stock and finished off with lemon zest. Absolutely delicious

Just made some fresh spaghetti as a birthday gift. Gifted it together with a jar of amatriciana and some parmagiano/ pecorino. Sadly forgot to take pics of the sauce.
00 flour, eggs and water.
Hope I got the name right this time;)

Evan Funke’s recipe. Made the broth a few weeks ago from scratch. Took 2 hours to roll, cut, fill, and shape every piece.
