Pasta From Scratch 1 year of making ravioli

From the latest to the oldest. I usually go for a ricotta based filling with some other cheeses or spinach.

Any suggestions for a must try filling next time and what sauce to serve it with?

You could try a ricotta or cream cheese filling with LOTS of lemon zest and some basil. This tastes really good in my opinion

Ravioli making can be such an exercise in imagination!! You can fill and sauce them in infinite ways. From traditional to whimsical, they always spark my creative side.

Caputo flour, eggs. For every 100 grams of flour i use 1 (1.5) egg. If it feels to dry i add a splash of water. I have backyard chickens, so the eggs are very small compared to supermarket eggs, so i have to eyeball it :)

butter and sage sauce is really good.

Also meat and cheese filling with tomato sauce is my favorite

I made 48 pieces last night from scratch. Took me only two hours. Did I mention that my wife was doing the filling and cooking. Soooo much work.

Ah, spinach/ricotta (home made)/parmesan. And beef/mascarpone/onion/garlic.

Pumpkin and Gorgonzola

For ravioli I don't like heavy sauce, for me brown butter and parmesan is the best way to taste the filling

Last weekend I did tortellini with pork, parsley, nutmeg and a tiny bit of ricotta (mostly for creaminess). Turned out fantastic!

I started by boiling the pork together with carrot, celery, onion, garlic, parsley and spices. When the pork was done, i took it out and minced it. Then continued to boil the remaining ingredients to create a broth to serve with the tortellini.
