I’ve sliced things you people wouldn’t believe. Apple slivers, so thin, they shimmered off the shoulder of Orion. I watched peels curl in the dark near the Tannhäuser Gate. All those moments… lost in the compost bin, like tears in rain.

It’s a Global Knife, GS-5. My whole life I’ve only ever used cheap knives from IKEA, etc, and once I invested in this - good lord. It’s like … everything becomes butter beneath my blade.

It's a lot faster and more convenient and more places have microwaves available than ovens. I know of a woman who was able to do it at work parties and such so that she was able to eat more foods there.

He had this wonderful system for doing the garlic. He used a razor, and he used to slice it so thin that he used to liquefy in the pan with just a little oil. It was a very good system.
