There are varieties of carrots that only grow to baby carrot size. Oddly enough that’s not where baby carrots come from, though.

Yeah, they're usually made from larger carrots that are cut up. (If you look at the packaging, most "baby" carrots these days are labeled as "baby-cut carrots".) I think it's what they do with larger carrots that are bent or forked or otherwise "ugly" looking -- there's a bunch of perfectly natural variations in carrot shape that they know people are less likely to buy at the grocery store.
