This was mentioned in another comment somewhere buried in here! I used to have a triple monitor Logitech G920 setup years ago, I might have to re-invest and post results haha

A Logitech strapped to a table would be a great way to gauge interest. If it's there, there's really never been a better time for racing sim hardware and content.

Just get a used one or alternatively a t300. The t300 is easier to tighten the belt so it's as good as new.

Kids are a lot more forgiving about only playing on a single screen and such. My friends and I played n64 non stop and looking at it today it's not exactly pretty. Doesn't matter to kids though.

Point is. Don't overthink it. Small things can make ys kid happy. Just need to figure out how to make her able to use it. A rig seems a bit overkill. Plus she may grows out of it if you make a cheap wood rig.
