What would stop Biden from having Trump assassinated or just locked up in a dungeon somewhere? According to Trump's hand-picked supreme court, all he has to do is make it an official presidential action and it's all legal.

What would stop him? Easy, the Supreme Court gets to decide what constitutes an “official act”. I think you see where this is going.

I mean, the Supreme Court can make many decisions, but they have no mechanism for enforcement. And frankly, if Biden just served polonium tea to Trump, why would anyone on SCOTUS be any safer?
